Chocolate Coconut Macaroon

When I was little I was apprehensive about coconut but my Grandparents often had these cookies that looked delicious.  Reluctant, I tried one and let me tell you - LIFE CHANGING.  I learned these tasty treats were called Coconut Macaroons and they had been dipped in Chocolate.  

Tasted like HEAVEN!  So we decided a caramel corn tribute was in order.  Enjoy crunchy coconut infused caramel toasted with actual shredded coconut and then tumbled in dark chocolate.  So good you'll be coming back for more!
