Greek Goddess

My family always had HUGE gardens growing up and that meant there would come a time of year where we had an abundance of cucumbers.  The challenge became how to incorporate them into a million different things so we could make use of this great harvest.  Thus, I have loved cucumbers my entire life.  They taste like home to me.  This is a fun savory, herby cucumber snack that reminds me a bit of Greek Tzaziki sauce and is VERY unique.  (Trust me - you can literally taste the cucumber in it - it's pretty cool!)
